❄️ How to Freeze Pizza Dough
Step 1 — Complete the first riseMake the dough fully, complete the first rise, then portion into dough balls.
Step 2 — Coat in olive oilLightly coat each ball in olive oil — prevents freezer burn and skin formation.
Step 3 — Wrap and freezeWrap tightly in plastic wrap. Place in a labeled zip-lock bag with air pressed out. Freeze immediately in the coldest part of the freezer.
Step 4 — TimelineGood for up to 3 months. After 3 months, yeast weakens and the dough won't rise as well. Label with date, size, and dough type.
✅ How to Thaw and Use
Option A — Overnight (best)Move from freezer to fridge the night before. Thaw slowly 8-12 hours. Pull out 1-2 hours before using to come to room temp.
Option B — Same dayPlace frozen dough in an oiled bowl, cover, leave at room temp 4-6 hours until thawed and slightly puffed.
For Detroit/Deep DishAfter thawing, press into oiled Lloyd's pan, cover, rest 30-60 minutes before topping. The dough needs to relax and fill the corners.
Signs it's readyRoom temp, slightly puffy, springs back slowly when poked. If it tears, give it 20 more minutes. Never force stretch cold dough.
Never microwave to thawKills the yeast. Produces flat, dense, sad pizza. Always slow thaw.
