Every piece of equipment the crew actually uses. No affiliate fluff, no sponsored placements — just the tools that make the recipes in this vault work the way they're supposed to. If it's on this list, someone in the crew owns it and uses it regularly.
// The DRC Gear Philosophy
Every item on this page has been personally chosen and used by the crew. These aren't the cheapest options — but where price doesn't impact food quality, we'll always link the best budget pick we can find. The goal is simple: gear that elevates your cooking and makes the process easier. No gimmicks. No sponsored garbage. Just what actually works in a real kitchen.
⚠️ The Plastic Problem — Read This
No plastic in the kitchen. Full stop. Here's why it matters and what to do about it:
🔪 Never cut on plastic cutting boards. Every cut releases microplastics directly into your food. Switch to wood or bamboo — end grain hardwood is what professionals use.
🫙 Never microwave plastic containers. Heat causes plastic to leach chemicals into your food. Glass or stainless only for reheating. This includes plastic wrap over bowls — use a plate.
🍳 Throw away your Teflon. Non-stick pans with scratches, chips, or missing coating are actively poisoning your food. If the coating is damaged in any way — it goes in the trash today. No exceptions. Cast iron, carbon steel, and stainless steel are what you replace it with. They last forever and get better with use.
👶 Small rats (kids) in the house? Get them BPA-free, phthalate-free children's dishes for their meals — but keep the adult kitchen plastic-free. Children are more vulnerable to chemical exposure from plastics than adults.
💡 Don't want to spend money right now? Check Facebook Marketplace, OfferUp, and your local Goodwill or thrift store first. Stainless steel pots, pans, and bakeware show up constantly and cost almost nothing. Cast iron gets better with age — a $5 thrift store skillet that's been seasoned for 20 years is better than anything new. A rat always finds the deal first.
🔪 Sharp Knives Save Fingers
A dull knife is the most dangerous thing in the kitchen. You apply more force, the knife slips, and you cut yourself. A sharp knife cuts where you aim it. The crew is not recommending a $300 knife — we're recommending a sharp one. Whatever knife you have, get it sharpened. If you're buying new, buy sharp and keep it sharp. A honing steel takes 30 seconds before every use. A whetstone twice a year. No excuses.

🍲
Dutch Oven (5-7 qt)
The single most-used pot in the vault. Bolognese, pot roast, short rib ragu, braised short ribs, chile verde — all need this. Lodge or Le Creuset.

🍳
Cast Iron Skillet (12 inch)
Smash burgers, carnitas crisp, sinner chicken, roast potatoes, Detroit pizza reheat. Lodge pre-seasoned is the move.
Required for any stir fry — kung pao, chow mein, moo shu, pad thai, blackpepper chicken. Carbon steel heats faster than cast iron, induction compatible. No coating to chip — seasoned naturally like cast iron.
Healthier fried chicken, reheating pizza without sogging it out, roast potatoes in 20 min, crispy carnitas finish. The healthy swap section in the vault references air frying constantly — this is what the crew uses.
Built specifically for pizza and bread dough. Spiral hook mimics hand kneading — develops gluten better than a standard stand mixer for high-hydration doughs. Great for Detroit and Neapolitan.
Halal garlic sauce, tomatillo ranch dressing, harissa, pie crusts, breadcrumbs, chopped herbs at scale. Does what a blender can't — chops without liquifying. 1000 watts handles anything in the vault.
Butter chicken sauce, halal garlic sauce, tomatillo dressing, Korean BBQ marinade, jollof pepper base. Vitamix or Ninja Pro.

Ninja PossibleCooker (8.5 qt)
Slow cooker, sear, braise, steam, bake — all in one pot. Replaces your crockpot and does more. Crockpot meatballs, pulled pork, white chicken chili, pot roast. 8.5qt fits a full brisket.
Cinnamon rolls, sourdough sticky buns, XLB dough, cookie dough at scale. The Ooni is better for pizza dough specifically — but KitchenAid handles everything else in the vault.
The standard KitchenAid attachments have a coating on them — upgrade to full stainless. No coating to chip or flake into your dough. Dough hook, flat beater, and wire whisk in solid stainless steel. If you already own a KitchenAid, this is the first upgrade to make.
The only pan that makes real Detroit pizza. Blue steel conducts heat differently — gives you the fried caramelized edge crust. Cannot be substituted.

Kitchen Scale (Digital)
Every baking recipe in this vault has gram measurements. Cookies, cinnamon rolls, pizza dough — measuring by weight is more accurate than cups. OXO or Escali.
Cookies, roast potatoes, BBQ chicken, sheet pan dinners. Stainless steel — no coating to scratch or chip, no aluminum leaching. Lasts forever and cleans easily. This is the no-plastic, no-coating upgrade for your baking sheets.
Required for pita bread and any high-heat pizza. Steel holds heat better than a stone — better oven spring, crispier crust, faster cook. Also works for pita, flatbread, and reheating leftover pizza properly.
Cinnamon rolls, sourdough sticky buns, enchiladas, shepherd's pie. A standard kitchen staple — Pyrex is fine.

📦
Dough Proofing Containers (Set)
Airtight containers sized for individual dough balls — pizza, sourdough, cinnamon rolls. Clear sides so you can see the rise without opening. Buckle lid keeps a proper seal for cold fermentation. Makes organizing multiple doughs easy.
The secret to consistent cookies. Every ball the same size means every cookie bakes the same way. Used for cookies, muffins, and cinnamon roll filling. Get a medium (1.5 tbsp) size.
Blueberry muffins, raspberry muffins. Light colored — same rule as baking sheets.

🔪
Babish High-Carbon Chef's Knife (8 inch)
Used in every single recipe. High-carbon 1.4116 steel — holds an edge longer than standard stainless. A sharp 8-inch chef's knife is all you need for 90% of prep work in this vault.
For breaking down whole chickens, smashing garlic, and chopping through bone. Same high-carbon 1.4116 steel as the chef's knife — matches the set. A cleaver makes LA Galbi and Korean short ribs significantly easier.
Used in: every piece of meat, deep frying (oil temp), bread baking (internal temp), candy/caramel making. Not optional — guessing doneness is how you ruin a $40 piece of meat.
Point and shoot to read surface temp instantly. Know when your cast iron is actually at 500°F for smash burgers, when your wok is hot enough for stir fry, or when your pizza steel is ready. Takes the guesswork out.
Handle cast iron, Dutch ovens, sheet pans, and the Lloyd's pizza pan without burning yourself. Silicone grips better than cloth and is waterproof. Get a pair — you need two hands.
Drain pasta, rinse vegetables, strain stocks and broths. Stainless only — no plastic colanders. Plastic colanders crack over time and shed microplastics into your food when you pour boiling water through them. This one lasts forever.
Grilling, searing, pasta tossing, pulling meat. Get two pairs. OXO Good Grips.
